Today, I’m sharing a fresh and flavorful salad perfect for your New Year’s Eve dinner! Brussel sprouts, arugula and hazelnuts come together in a healthy salad. I love to prepare this salad for friends because it’s easy, quick and tossed in the most addictive olive oil based dressing!

Ingredients:
- 5 ounces Brussels sprouts
- 2 ounces arugula
- 1 lemon
- 2 tablespoons hazelnuts
- 1 tablespoon honey
- 2 tablespoons of olive oil
Instructions:
- In a small bowl, add the honey and the juice of 1 lemon. Season with salt and pepper to taste. Slowly whisk in 2 tablespoons of olive oil.
- In a large bowl, combine the arugula, Brussels Sprouts and hazelnuts. Add the vinaigrette. Season with salt and pepper to taste.
